Summary
Available at lower cost than many renewable options, lactose and permeates are among the dairy ingredients with expanding potential in numerous industries, with seemingly endless opportunities for valorization. An objective of writing this literature review is to provide scientists from a variety of fields an overview of some applications where lactose and permeates have found use, with hopes to inspire further innovation.
