🏃➡️ On-the-go high protein beverages have gained momentum over the years and that’s not showing any signs of slowing down. Creating these popular products at increasingly higher levels of protein is not without its challenges. Dr Esra Cakir-Fuller, Nutritional Solutions Manager at the Fonterra R&D Center explains, “Proteins have their own set of physical and chemical attributes, which can limit their addition rates in concentrated Ready-To-Drink formats, such as gelation upon heat treatment.”
The Fonterra R&D team have found a way in overcoming this challenge through decades of experience in ingredient development, application engineering, and nutrition science. “Our solution offers over 14% protein content, with more than 50% derived from wheyLiquid obtained from cheese manufacture. More using our heat stableProduct that has increase tolerance to temperatures that otherwise would lead to denaturation/floculation of the proteins. More microparticulated Whey ProteinProtein in milk that remains in water phase after casein precipitates. More Concentrate 550, delivering high-quality protein in a small volume” says Dr Cakir-Fuller. This could result in an impressive 50g of protein in a 11.5oz serve.
