Milk protein concentrate and isolates (MPC/I) powders are commonly used in high-protein product formulations like ready-to-drink (RTD) beverages. However, regular MPC/Is at high protein concentrations can cause issues with process and shelf-stability (such as sedimentation and gelation). To address this, RTD producers often use chemical additives like phosphates, which consumers tend to dislike on product labels. 

Idaho Milk Products developed IdaPlus, a functional MPC/I, to solve this problem. Ready-to-drink beverages (30g protein per 11oz serving) formulated with IdaPlus were processed without adding phosphates and showed over 18 months of shelf-life. This innovative ingredient demonstrates that IdaPlus can help create cleaner-label, high-protein, shelf-stable beverages. Additionally, due to its faster hydration, better solubility, and lower dispersion viscosity, IdaPlus allows for the formulation of higher protein yogurts (both drinkable and spoonable) without excessive thickening, graininess, or chalkiness and high-protein ice cream recipes without any shrinkage challenges. The superior functionality of IdaPlus also allows product developers to increase the protein load in several other food formulations, such as RTD coffee beverages, Ready to mix (RTM) shakes, soups, dips, and puddings.
